HAM AND BROCCOLI CRUSTLESS QUICHE

Ingredients

  • 1 tablespoon butter
  • 1 cup ham, chopped
  • ½ cup onion, diced
  • 2 cups broccoli, cut into bite-sized pieces
  • 1 cup shredded cheddar cheese (not pre-shredded)
  • 6 large eggs
  • 1 cup heavy whipping cream

Instructions

  1. Preheat the oven to 400°F and grease a 9″ pie pan.
  2. In a medium-sized skillet, melt the butter over medium heat.
  3. Sauté the diced onion in the melted butter until soft, about 4-5 minutes.
  4. Place the chopped broccoli florets into the bottom of the pie pan, then add the sautéed onion and ham mixture on top.
  5. Sprinkle the shredded cheddar cheese evenly over the top.
  6. In a small bowl, whisk together the eggs and heavy whipping cream, then pour it over the broccoli, ham, and cheese mixture in the pie pan.
  7. Bake the quiche on the middle rack for 30-35 minutes, until the eggs are set.
  8. Let cool slightly before slicing. Serve warm or cold.

Notes

  • You can substitute bacon for the ham for a different flavor.
  • If you’re following a keto diet, be sure to shred your cheddar cheese from a block, as pre-shredded cheese contains potato starch, which increases carbs.
