DEHYDRATING ZUCCHINI- MAKE PINEAPPLE ZUCCHINI CANDY!

INGREDIENTS

  • Pineapple juice
  • Zucchini (peeled, de-seeded, and cut into large cubes; they shrink significantly during cooking and dehydrating)
  • Powdered sugar
  • Cornstarch or tapioca starch
  • A dehydrator

INSTRUCTIONS

  • Pour enough pineapple juice into a large pot to fully submerge the zucchini pieces.
  • Add the zucchini cubes to the pot and bring the juice to a boil.
  • Lower the heat to medium and simmer until the zucchini becomes soft and translucent, resembling pineapple.
  • Use a slotted spoon to remove the zucchini from the pot and transfer it to a colander to drain.
  • Arrange the drained zucchini pieces in a dehydrator set to 130°F (54°C). Dehydrate for about 18 hours, or until completely dry.
  • Once dried, place the zucchini in a bag along with a few tablespoons of powdered sugar and cornstarch or tapioca starch. Seal the bag and shake gently to coat the pieces evenly.
