This canned salmon pasta with tomato is a budget-friendly, delicious dish that can be ready in just 15 minutes, making it ideal for busy weeknights. It’s simple to prepare, packed with bold flavors, and best of all, it mainly relies on pantry staples you probably already have on hand.
INGREDIENTS
- 300 g pasta
- 400 g chopped tomatoes
- 2 x 213g canned salmon (15 oz)
- 2 tablespoons olive oil
- ½ cup grated parmesan cheese
- 1 tablespoon finely chopped garlic
- ½ cup finely chopped onion
- ½ tablespoon Italian seasoning
- Salt and freshly ground black pepper
- Fresh parsley, finely chopped
- About 1 cup pasta water
INSTRUCTIONS
- Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente. Reserve 1 cup of pasta water for later use. Meanwhile, prepare the tomato sauce.
- In a shallow skillet, heat olive oil over medium-high heat until hot. Add the chopped onions and sauté until soft, translucent, and fragrant. Add chopped garlic and cook for about 30 seconds, stirring occasionally to prevent burning.
- Pour in the chopped tomatoes, add Italian seasoning, salt, and black pepper, and stir. Reduce the heat and simmer for 5 minutes, stirring occasionally to prevent the sauce from drying out or sticking to the pan.
- Stir in ½ cup pasta water and grated parmesan cheese, cooking until the cheese has fully melted.
- Drain the canned salmon and add it to the sauce (debone if preferred). Break the salmon into smaller chunks with a ladle and stir to combine. Simmer for 2 minutes, then check the seasoning and adjust salt and pepper as needed.
- Add the drained pasta to the sauce, stirring gently to combine. If a thinner sauce is desired, add more reserved pasta water until reaching your preferred consistency.
- Just before removing from heat, stir in finely chopped parsley.
- Serve immediately, topped with freshly grated parmesan cheese and a side of garlic bread. Enjoy!
