Crockpot Chicken with Sour Cream and Bacon – Chicken breasts wrapped in bacon and slow-cooked in a creamy blend of sour cream, cream of chicken soup, and Cheddar Cheese soup. This simple, budget-friendly dish comes together with just a few affordable ingredients for a deliciously easy meal.
INGREDIENTS
- 8 slices of bacon
- 1/3 cup diced onion
- 4 boneless, skinless chicken breasts
- 1 (10-ounce) can cream of chicken soup
- 1 (10-ounce) can Cheddar Cheese Soup
- 1 cup sour cream
- 1/3 cup flour
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
INSTRUCTIONS
- Cut each chicken breast in half to create long, tender-like pieces.
- In a large skillet, cook bacon over medium heat until it’s halfway done, allowing some fat to render, but leaving the bacon pliable.
- While the bacon is still pliable, wrap one slice around each chicken piece and place them in the crockpot.
- In the same skillet, add diced onion to the bacon fat and cook for 2 minutes. Remove with a slotted spoon and add to the crockpot.
- In a medium bowl, whisk together both soups, sour cream, flour, and garlic powder. Pour the mixture over the chicken.
- Cover the crockpot and cook on low for 5-6 hours, or until the chicken is fully cooked.
- Once the chicken is done, remove it from the crockpot and place it on a serving platter. Whisk the sauce to combine, then taste and adjust seasoning with salt and pepper.
- Serve over rice, egg noodles, or mashed potatoes.
