INGREDIENTS (SERVES 2)
- 4 slices of bread (your choice: sourdough, white, or whole wheat)
- 2 cups shredded cheese (use a combination of cheeses like sharp cheddar, Parmesan, Gruyère, or mozzarella for best results)
- Butter or mayonnaise for spreading on bread
INSTRUCTIONS
- Prep the Bread: Spread a thin, even layer of butter or mayonnaise on one side of each slice of bread. This will be the exterior that gets golden and crispy.
- Assemble the Sandwiches
- Place one slice of bread, buttered side down, on a plate or cutting board.
- Top with a generous amount of shredded cheese, then place another slice of bread, buttered side up, on top to form a sandwich. Repeat for the second sandwich.
- Prepare the Frico (Cheese Crust)
- Heat a nonstick skillet over medium heat.
- Sprinkle about 2–3 tablespoons of shredded cheese directly onto the skillet in a rough rectangle shape slightly larger than the bread slice.
- Cook the Sandwich: mmediately place the sandwich on top of the melting cheese in the skillet. Let the cheese cook until golden and crispy, about 2–3 minutes.
- Flip the Sandwich
- Use a spatula to carefully lift the sandwich and check that the cheese crust is crisp and golden. If ready, flip the sandwich over. Sprinkle another 2–3 tablespoons of shredded cheese onto the skillet and repeat the process for the other side.
- Finish Cooking: Cook the second side until the cheese crust is crispy and golden and the sandwich is heated through, about 2–3 minutes.
- Serve Hot: Remove the sandwich from the skillet, let it cool for a minute, then cut in half. Serve immediately with tomato soup, salad, or your favorite side
