CHILI + HONEY ROASTED SWEET POTATOES WITH LIME JUICE

These Chili and Honey Roasted Sweet Potatoes with a hint of lime are the ultimate balance of sweet and savory—perfect as a side dish or a post-workout snack!

INGREDIENTS

  • 1 sweet potato, halved lengthwise
  • 2 tsp olive oil
  • 1 tbsp honey
  • 1/2 tsp chili powder
  • 1/2 tsp sweet or smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Kosher salt and cracked black pepper
  • 1 lime
  • Fresh chopped parsley (optional)

INSTRUCTIONS

  • Preheat oven to 400°F (200°C).
  • Prep Sweet Potatoes: Brush each sweet potato half with olive oil, including the skin. Season thoroughly with kosher salt and cracked black pepper.
  • Score and Season: Use a knife to score the flesh of the sweet potatoes. Sprinkle the top halves with chili powder, paprika, and cayenne pepper (if desired).
  • Bake: Place the sweet potatoes on a baking sheet, cut side up. Bake for 30 minutes or until tender.
  • Add Honey and Lime: Remove from the oven and spread honey over the scored tops. Squeeze fresh lime juice over both halves just before serving.
  • Garnish: Sprinkle with chopped parsley, if desired, and serve warm.
