BAKED PEACH OATMEAL

Imagine the cozy flavors of rice pudding and peach crisp coming together in one comforting dish—this cinnamon-spiced baked peach oatmeal is the delicious result!

INGREDIENTS

  • 2 cups old-fashioned oats
  • 1 can (29 ounces) sliced peaches, drained
  • 1/2 cup melted butter
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 2 eggs

INSTRUCTIONS

  • In a large bowl, combine the oats, baking powder, baking soda, cinnamon, salt, and brown sugar.
  • In a separate bowl, whisk together the milk, melted butter, vanilla extract, and eggs.
  • Pour the wet ingredients into the dry ingredients and mix until well combined. Stir in the peaches.
  • Grease an 8×8 baking dish with cooking spray or butter.
  • Pour the batter into the prepared dish and bake at 350°F for 45-50 minutes, or until set and golden brown on top.
  • Serve warm, either on its own or with fresh heavy cream or ice cream. It’s also perfect for breakfast and leftovers make a great dessert when topped with ice cream!
