INGREDIENTS
- 500g beef sausages
- 2 tbsp oil
- ½ onion, sliced
- 1 tsp crushed garlic
- 1–2 tbsp curry powder (adjust to taste)
- 1 cup beef stock
- 2 tbsp tomato paste
- ¼ cup cream
- 50g baby spinach leaves

INSTRUCTIONS
- Heat 1 tbsp of oil in a large saucepan over medium heat. Prick the sausages with a fork to release excess fat, then cook, turning regularly, until just done. Remove and set aside.
- In the same pan, add the remaining 1 tbsp of oil, along with the sliced onion and garlic. Sauté until soft and fragrant.
- Stir in the curry powder and cook for 1 minute until aromatic.
- Pour in the beef stock and add the tomato paste, mixing well. Simmer for about 10 minutes until the sauce thickens. Taste and adjust seasoning if needed.
- Slice the sausages into 2cm chunks and return them to the pan, coating them in the sauce.
- Stir in the cream until evenly combined, then add the baby spinach and toss until just wilted.
- Serve immediately.
