Somewhere in the world, this ground beef recipe probably has a name—but I like to call it: healthy ground beef and broccoli fried quinoa. It might sound a little unusual, but it’s a super tasty, easy, and healthy dinner option. Plus, it’s perfect for meal prepping! Just double the recipe, and you’re set for the week.
INGREDIENTS
- 8 oz ground beef
- 1 cup broccoli florets, chopped
- 1 cup cooked quinoa
- 3 garlic cloves, minced
- 1 1/2 Tbsp tamari sauce
- 2 spring onions, chopped
- 1 carrot, chopped
- 1 Tbsp olive oil
Optional Add-Ins:
- Crushed red pepper (for a spicy kick!)
- 1 cup spinach, chopped
- 2 Tbsp cilantro, chopped
INSTRUCTIONS
- Heat a large non-stick pan over medium to medium-high heat. Cook the ground beef until almost done, covering with a lid if needed.
- Add olive oil, garlic, and crushed red pepper (optional). Sauté until fragrant.
- Stir in the broccoli and cook for 2-3 minutes. Then, add tamari sauce and mix in the carrots, spring onions, and quinoa.
- Taste and adjust seasoning with additional tamari sauce if needed. Cook for another few minutes, stirring occasionally.
- If desired, stir in spinach and cilantro, then turn off the heat.
- Serve immediately and enjoy!
