CROCKPOT CHICKEN AND BROCCOLI (CHEESY!)

This easy, creamy, and cheesy chicken and broccoli dish is made in the crockpot with cream of mushroom soup, beef onion soup mix, and shredded cheddar cheese. It’s a family favorite that’s perfect for dinner! Serve it over egg noodles or rice for a delicious, comforting meal that everyone will love. The best part? It’s incredibly simple to make!

Ingredients

  • 1.5 pounds skinless, boneless chicken breast, diced
  • 1 package beef onion soup mix
  • 6-8 cups broccoli florets (about 1-2 heads of broccoli)
  • 1 small onion, chopped
  • 10 oz can of cream of mushroom soup
  • 10 oz can of cream of chicken soup
  • 2 cups shredded cheddar cheese

Instructions

  • Place the diced chicken in the slow cooker.
  • Sprinkle the beef onion soup mix over the chicken.
  • Add the chopped broccoli and onion on top of the chicken.
  • Pour both cans of soup over the vegetables.
  • Sprinkle 1 ½ cups of shredded cheddar cheese over the top.
  • Stir everything together to combine thoroughly.
  • Cover and cook on LOW for 6 hours or HIGH for 4 hours.
  • Once cooking is complete, sprinkle the remaining ½ cup of cheese on top and let it melt for a few minutes before serving.
  • Serve over rice or egg noodles for a complete meal!

Notes: If you only have one type of soup on hand, you can use two cans of the same soup instead.
