Craving a sweet treat that aligns with your Paleo or AIP diet? Look no further than this homemade fruit juice jello. This simple recipe swaps out processed sugar and artificial additives for the natural sweetness of fruit juice and the gut-healing benefits of gelatin. 1 It’s a delicious and nutritious way to satisfy your sweet tooth without compromising your health goals.
Equipment
- Saucepan
- Storage container (glass with a lid or silicone mold)
- Refrigerator
Ingredients
- 2 cups juice (store-bought and pasteurized or homemade)
- 1 tablespoon gelatin (use 2 tablespoons for Concord grape juice; for high-quality, pasture-raised gelatin, use code BEAUTIFUL10 for a 10% discount)
Instructions
- Gather all ingredients.
- Pour 1 cup of juice into a small saucepan. Sprinkle the gelatin over the surface and allow it to bloom for about 30 seconds. Whisk the gelatin into the juice.
- Heat the juice over medium heat for 1–2 minutes, stirring or whisking, until it’s steaming and foamy but not simmering. Remove the saucepan from heat and add the remaining 1 cup of cold or room temperature juice.
- Pour the mixture into a storage container and refrigerate for at least 3 hours, or ideally 6 hours or overnight, until it firms up and is ready to slice.
- Slice the jello into cubes or desired shapes and serve.
Notes
- If using fresh or raw juice, use only ½ cup of juice to heat with the gelatin, saving the rest to preserve its raw state.
