Thai salad with peanut dressing is a vibrant, flavorful dish that everyone loves and can’t get enough of.
INGREDIENTS
For the Salad
- 2 cups romaine lettuce, thinly sliced
- 1.5 cups red cabbage, thinly sliced
- 1 cup napa cabbage, thinly sliced
- 1 cup shredded carrots
- 1 cup cooked and cooled shelled edamame
- 1 red bell pepper, thinly sliced
- 1 cup diced cucumber
- ½ cup sliced scallions
- ¼ cup minced fresh cilantro
- ½ cup chopped cashews
For the Thai Peanut Dressing
- ½ cup peanut butter
- 2 tablespoons low-sodium Tamari or soy sauce
- 1.5 tablespoons maple syrup
- 1 teaspoon Sriracha
- 1 teaspoon sesame oil
- 1.5 tablespoons fresh lime juice (juice of one lime)
- ¼ cup water (add more as needed for desired consistency)
INSTRUCTIONS
- Prepare the Salad: Combine all salad ingredients in a large bowl and toss gently to mix.
- Make the Dressing: Add all dressing ingredients to a blender and blend until smooth. If needed, thin the dressing by adding water ½ teaspoon at a time until you reach your preferred consistency.
- Assemble the Salad: Drizzle some dressing over the salad and toss to coat. Add extra dressing as desired.
- Serve and Enjoy: Finish with an additional drizzle of dressing, if desired. Serve chilled and enjoy!
