This taco casserole with tortillas is absolutely delicious! It layers perfectly seasoned ground beef, salsa con queso, and crispy tortillas, all topped with a gooey Mexican cheese blend. It’s so simple to prepare, you might just want to enjoy it for dinner every night!
INGREDIENTS
- 1 lb ground beef
- 1 ½ tbsp taco seasoning mix
- ½ cup water
- ½ cup salsa con queso
- 3 8-inch flour or corn tortillas
- 2 cups shredded Mexican cheese blend or cheddar cheese
- Sour cream (for serving)
INSTRUCTIONS
- Preheat the oven to 350°F.
- Heat oil in a large skillet. Add the beef and cook until browned.
- Stir in the taco seasoning mix and water. Simmer for 2-3 minutes.
- Mix in the salsa con queso and remove from the heat.
- Spray an 8-inch round baking dish with cooking spray.
- Layer one tortilla at the bottom of the dish. Add ⅓ of the beef mixture on top, followed by ⅓ of the shredded cheese.
- Repeat the layers twice more, finishing with a layer of cheese.
- Bake for 20 minutes, until the cheese is melted.
- Let the casserole cool for a few minutes before slicing and serving.
- Serve with sour cream.
