MARRY ME CHICKEN TORTELLINI

This simple Marry Me Chicken Tortellini recipe features tender chicken breast in a creamy sun-dried tomato and parmesan sauce, perfectly paired with cheesy tortellini. It’s an ideal choice for a cozy weeknight dinner or a memorable meal with loved ones!

INGREDIENTS
For the Tortellini

  • 1 (19 oz) bag frozen cheese tortellini

For the Chicken

  • 2 tbsp olive oil
  • 1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ tsp black pepper
  • ½ tsp Italian seasoning
  • ½ tsp paprika

For the Marry Me Sauce

  • 2 tbsp butter
  • ½ cup sun-dried tomatoes in oil, drained and thinly sliced
  • 3 tsp minced garlic
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 cup finely shredded parmesan cheese
  • 2 cups chopped baby spinach

INSTRUCTIONS

  • Season the chicken with black pepper, Italian seasoning, and paprika. Set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, or until golden and cooked through. Remove and set aside.
  • Lower the heat to medium-low, then melt the butter in the skillet. Sauté the garlic and sun-dried tomatoes for about 30 seconds.
  • Stir in the chicken broth, heavy cream, Italian seasoning, black pepper, and paprika. Whisk until the sauce begins to bubble, then gradually add the parmesan, stirring until it melts completely.
  • Return the chicken to the skillet and add the spinach and tortellini. Stir occasionally and let it simmer for 5 minutes, until the spinach begins to wilt.
  • Garnish with fresh parsley and extra parmesan cheese. Enjoy!
