- 1 large zucchini (about 1 cup grated)
- 1 ½ cups all-purpose flour
- 1 cup grated cheddar cheese
- 1 tbsp baking powder
- 2 eggs, at room temperature
- ½ cup milk, at room temperature
- ¼ cup olive oil
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup chopped green onions
Instructions
- Preheat your oven to 180°C (350°F) and position the wire rack in the center. Grease a loaf pan with butter and set it aside.
- Rinse and dry the zucchini thoroughly, then cut off the ends. Grate it using the coarse side of a box grater.
- To remove excess moisture, squeeze the grated zucchini by pressing it between your palms, a handful at a time. After squeezing, you should have about 1 cup of grated zucchini.
- In a bowl, whisk together the flour, salt, black pepper, and baking powder until evenly combined.
- In a separate large bowl, whisk the eggs, milk, and olive oil together. Stir in the grated zucchini, ensuring it’s evenly distributed.
- Add the dry ingredients to the wet mixture and gently stir with a spatula until there are no visible streaks of flour.
- Fold in the grated cheddar cheese and chopped green onions, mixing carefully until everything is evenly incorporated. Avoid overmixing.
- Pour the batter into the prepared loaf pan, smoothing the top with a spoon or offset spatula. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, allow the bread to cool in the pan for 10 minutes on a cooling rack.
- After 10-15 minutes, run a knife around the edges of the loaf to loosen it from the pan. Remove the bread and transfer it to a cooling rack to cool completely.
