INGREDIENTS
For the Spiced Plums:
- 8 medium plums, cut into chunks
- ½ cup light brown sugar
- 1 teaspoon ground cinnamon
- 1 star anise
For the Oat Crumble:
- 2 ½ cups jumbo rolled oats
- 1 ¼ cups all-purpose flour
- 1 cup butter, cubed and chilled
- 1 cup light brown sugar
INSTRUCTIONS
Prepare the Spiced Plums:
- In a medium saucepan over medium heat, combine the plums, brown sugar, cinnamon, and star anise.
- Cook the mixture, stirring occasionally, until the plums soften and break down into a thick, jam-like consistency.
- Remove from heat, discard the star anise, and let the mixture cool completely.
Make the Oat Crumble:
- In a food processor, combine the oats, flour, butter, and brown sugar.
- Pulse until the mixture resembles coarse crumbs and holds together when pressed.
Assemble and Bake:
- Preheat your oven to 350°F (175°C) and line a 9×9-inch (23×23 cm) baking pan with parchment paper.
- Press ¾ of the oat crumble mixture firmly into the bottom of the prepared pan to form an even base.
- Spread the cooled plum jam evenly over the base, then sprinkle the remaining oat crumble on top.
- Bake for 20-25 minutes, or until the edges are bubbling and the top is golden brown.
Cool and Serve:
- Let the bars cool completely in the pan to ensure they set properly.
- Once cooled, cut into squares and serve.
NOTES
- Plum Variety: Any type of plums can be used. If the plums are especially tart, adjust the sugar to taste.
- Butter: Use cold butter to achieve a crumbly texture for the topping.
- Storage: Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
