- 1 lb beef, cut into 1” cubes
- 2 small carrots, sliced
- 3 small parsnips, sliced
- 3 celery stalks, chopped
- 1 tsp onion powder
- 1 tsp minced garlic
- 1 ½ tsp Italian seasoning
- 1 bay leaf
- 6 cups beef broth
- Salt and pepper, to taste
- Xanthan gum (optional, for thickening)

INSTRUCTIONS
- Add all ingredients to the Crockpot.
- Cook on low for 6–7 hours or high for 4–5 hours, until the beef is fork-tender.
- If a thicker consistency is desired, mix a small amount of xanthan gum with water and stir it into the stew.
