EASY CHICKEN CURRY IN A HURRY

Delicious Chicken Curry in a Hurry is the perfect meal to whip up after a long day at work or play, and it’s easy on the budget. In just 30 minutes, you can serve this flavorful curry to your family.

INGREDIENTS

  • 1 lb Chicken, Beef, or Vegetables
  • 1 large white onion, minced
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 cup chicken/beef stock (or 1 cube)
  • ½ can coconut milk
  • 1 tsp cornstarch
  • 1 tsp ground cumin
  • Fresh coriander (to taste)
  • Optional: peas and other vegetables of your choice
  • 1 tsp extra virgin olive oil

INSTRUCTIONS

  • Heat the olive oil in a pan. Once hot, add the minced onion and spices (curry powder, garam masala, cumin).
  • Cook for a couple of minutes until the spices become aromatic, then add your choice of meat, chicken, or vegetables.
  • Stir to coat everything evenly, then cook until the meat or vegetables begin to simmer.
  • Gradually add the stock, scraping up any flavorful bits stuck to the pan.
  • Bring the curry to a simmer, then add the coconut milk. Stir until the texture and color start to change.
  • If the curry is too runny, mix the cornstarch with a little water to form a paste, then add it gradually until the curry thickens to your desired consistency.
  • Add the peas (or other vegetables) and simmer until the meat or vegetables are cooked through and tender.
  • Finish with a handful of fresh coriander, stir to combine, and your curry is ready!

Serve over basmati rice with homemade naan or pita bread, and enjoy with mango chutney on the side!
