This Fresh Zucchini Baked Feta Pasta is our take on the viral “TikTok Pasta.” It features a creamy blend of feta cheese, orecchiette pasta, juicy cherry tomatoes, savory onions, and fresh zucchini, all roasted in olive oil. Finished with a squeeze of lemon juice and a sprinkle of basil, this dish offers a flavorful, light twist on a beloved classic.
INGREDIENTS
- 1 8 oz block of feta cheese
- 1 16 oz box of orecchiette pasta (or your preferred pasta)
- 3 cups cherry tomatoes
- 2 small zucchinis, chopped into bite-sized pieces
- 1 red onion, diced
- 4 cloves garlic, minced
- 4 tbsp olive oil
- 2 tsp oregano (or Italian seasoning)
- 2 tsp salt
- Pepper to taste
- 1/2 cup pasta water (if needed)
- 3 tbsp lemon juice
- Fresh basil, chopped (for topping)
INSTRUCTIONS
- Preheat the oven to 400°F.
- In a large casserole or baking dish, combine the feta cheese, cherry tomatoes, zucchini, red onion, and garlic.
- Drizzle olive oil over the mixture, then add oregano, salt, pepper, and any other seasonings you prefer. Toss everything together so the vegetables are evenly coated.
- Bake for 25-30 minutes, or until the tomatoes have burst open and the zucchini and onions are tender.
- While the feta and vegetables bake, cook the pasta according to the package instructions. Save 1/2 cup of pasta water before draining the pasta, then set the pasta aside.
- Once the feta and vegetables are done baking, remove the dish from the oven. Gently stir everything together until the feta melts into a creamy sauce.
- Add the cooked pasta to the dish and fold it into the creamy feta-vegetable mixture. If the mixture seems too thick, gradually add the reserved pasta water to reach your desired consistency.
- Finish with a squeeze of lemon juice and a sprinkle of chopped basil on top.
