CHICKEN SPINACH AND MUSHROOM LOW CARB OVEN DISH

INGREDIENTS

  • 6 thinly sliced chicken breasts
  • 1 container green onion cream cheese
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1 large package of sliced mushrooms
  • 1 small bag of fresh baby spinach
  • 1 dash Weber Herb and Garlic Seasoning
  • 1 dash pepper
  • 8 oz shredded mozzarella cheese

INSTRUCTIONS

  • Preheat your oven to 375°F.
  • In a 9×13-inch baking dish, arrange the chicken breasts in a single layer. Top with spinach and mushrooms, then sprinkle with the seasoning and pepper.
  • Soften the cream cheese, then whisk in the olive oil and chicken broth until smooth. Pour this mixture over the chicken and vegetables.
  • Cover the dish with a piece of foil, but don’t seal it.
  • Bake for 20 minutes, then remove the foil and continue baking for another 20-25 minutes.
  • Sprinkle the shredded mozzarella cheese over the top and bake uncovered for an additional 10 minutes, or until the cheese begins to brown.
