INGREDIENTS (SERVES 4)

  • 3/4 lb lean ground turkey sausage
  • 8 oz high-fiber pasta
  • 4 cups fresh broccoli florets
  • 4 cloves garlic, chopped
  • 1/4 cup Parmesan cheese
  • Salt and pepper

INSTRUCTIONS

  • Bring a large pot of salted water to a boil. Add the pasta and cook. In the last 3 minutes of cooking, add the broccoli florets. Drain and set aside, reserving 1/2 cup of the cooking liquid.
  • In a skillet, brown the turkey sausage until it’s no longer pink. Add garlic and cook for 1 minute until fragrant. If you like a little heat, sprinkle in some red pepper flakes. Stir in the pasta, broccoli, and Parmesan cheese. Gradually add a few tablespoons of the reserved pasta water, stirring until a thin sauce forms. Serve with a squeeze of fresh lemon for extra flavor.
