I’ve already devoured four—or wait, is it five?—since making them this morning. They’re so irresistible! They filled me up so much that I didn’t eat lunch until nearly 2 p.m. With all that protein from the peanut butter, they’re a fantastic afternoon snack to keep hunger at bay. Plus, they’re a perfect grab-and-go breakfast option if you’re in a rush!
INGREDIENTS
- 1/2 cup peanut butter
- 1/2 cup honey
- 1/2 teaspoon vanilla extract
- 4 cups plain Cheerios
INSTRUCTIONS
- In a large microwave-safe bowl, combine the peanut butter and honey.
- Microwave on high for 1 minute, then remove and stir until fully blended.
- Return the bowl to the microwave for an additional 30–45 seconds.
- Stir in the vanilla extract until evenly mixed.
- Add the Cheerios and gently mix until the cereal is thoroughly coated.
- Scoop portions onto a parchment-lined baking sheet or into cupcake liners. Let them set. They’ll firm up enough to handle within about 30 minutes, but for best results, allow a few hours for them to fully harden.
