INGREDIENTS
For the Tortellini
- 1 (19 oz) bag frozen cheese tortellini
For the Chicken
- 2 tbsp olive oil
- 1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- ½ tsp black pepper
- ½ tsp Italian seasoning
- ½ tsp paprika
For the Marry Me Sauce
- 2 tbsp butter
- ½ cup sun-dried tomatoes in oil, drained and thinly sliced
- 3 tsp minced garlic
- 1 cup low-sodium chicken broth
- 2 cups heavy cream
- 1 tsp Italian seasoning
- 1 tsp black pepper
- 1 tsp paprika
- 1 cup finely shredded parmesan cheese
- 2 cups chopped baby spinach
INSTRUCTIONS
- Season the chicken with black pepper, Italian seasoning, and paprika. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, or until golden and cooked through. Remove and set aside.
- Lower the heat to medium-low, then melt the butter in the skillet. Sauté the garlic and sun-dried tomatoes for about 30 seconds.
- Stir in the chicken broth, heavy cream, Italian seasoning, black pepper, and paprika. Whisk until the sauce begins to bubble, then gradually add the parmesan, stirring until it melts completely.
- Return the chicken to the skillet and add the spinach and tortellini. Stir occasionally and let it simmer for 5 minutes, until the spinach begins to wilt.
- Garnish with fresh parsley and extra parmesan cheese. Enjoy!
