Whether you’re serving it as a quick meal or for a special occasion, this keto-friendly quiche is a WHOLE LOTTA YUM!
Ingredients
- 1 tablespoon butter
- 1 cup ham, chopped
- ½ cup onion, diced
- 2 cups broccoli, cut into bite-sized pieces
- 1 cup shredded cheddar cheese (not pre-shredded)
- 6 large eggs
- 1 cup heavy whipping cream
Instructions
- Preheat the oven to 400°F and grease a 9″ pie pan.
- In a medium-sized skillet, melt the butter over medium heat.
- Sauté the diced onion in the melted butter until soft, about 4-5 minutes.
- Place the chopped broccoli florets into the bottom of the pie pan, then add the sautéed onion and ham mixture on top.
- Sprinkle the shredded cheddar cheese evenly over the top.
- In a small bowl, whisk together the eggs and heavy whipping cream, then pour it over the broccoli, ham, and cheese mixture in the pie pan.
- Bake the quiche on the middle rack for 30-35 minutes, until the eggs are set.
- Let cool slightly before slicing. Serve warm or cold.
Notes
- You can substitute bacon for the ham for a different flavor.
- If you’re following a keto diet, be sure to shred your cheddar cheese from a block, as pre-shredded cheese contains potato starch, which increases carbs.
- Feel free to experiment with other cheeses, like a sharp cheddar, gruyere, or a three-cheese blend.
