CHICKEN SALAD WITHOUT MAYO

This healthy chicken salad tastes just like the classic deli-style version but without the mayo! This simple and delicious homemade recipe is packed with extra protein thanks to cottage cheese, making it a creamy and satisfying alternative without using mayo or yogurt.

INGREDIENTS

  • 10 ounces cooked chicken (about 2 ½ packed cups)
  • ¾ cup cottage cheese
  • ¼ cup onion (diced or grated, about ¼ of a small onion)
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ⅛ teaspoon cayenne pepper
  • Dash of nutmeg (optional)
  • ¼ teaspoon black or white pepper (optional)
  • ½ cup celery (diced)

INSTRUCTIONS

  • Prepare the Chicken: Place the cooked, chopped chicken in a large mixing bowl and set aside.
  • Blend the Dressing: In a mini food processor or blender, combine the cottage cheese, onion, lemon juice, honey, salt, garlic powder, paprika, cayenne pepper, nutmeg (if using), and black or white pepper. Blend until the mixture is completely smooth, about 30-45 seconds.
  • Combine Chicken and Dressing: Pour the blended cottage cheese mixture over the chicken in the bowl. Stir until everything is well combined.
  • Add the Celery: Fold in the diced celery, ensuring it is evenly distributed throughout the salad.
  • Chill and Adjust Seasoning: Cover the bowl and refrigerate for at least one hour to allow the flavors to meld.
  • Taste and Serve: After chilling, taste the chicken salad and adjust the seasoning if needed, adding more lemon juice, salt, pepper, cayenne, or garlic powder as desired. Serve and enjoy!
