CUCUMBER AVOCADO FETA SALAD

Light, refreshing, and packed with flavor, this vibrant combination of cucumber, avocado, feta, dill, and lemon is simply irresistible! Perfect as a side dish, salad, or a quick, nutritious snack. 

INGREDIENTS

For the Salad:

  • 2 ripe avocados, peeled, pitted, and chopped
  • 1 English cucumber, partially peeled and chopped
  • 1 cup feta cheese, cubed or crumbled
  • ½ cup fresh dill, leaves plucked or chopped
  • 3 tbsp extra virgin olive oil
  • 1 lemon, juice and zest (divided)
  • Salt and pepper, to taste

For Serving:

  • Boston lettuce leaves
  • Juice of ½ a lemon
  • Salt and pepper, to taste
  • Fresh dill and lemon zest for garnish

DIRECTIONS

  • In a medium-sized bowl, combine the chopped cucumber, avocado, feta, and dill.
  • Season with salt and pepper, then drizzle with olive oil, half the lemon juice, and half the lemon zest. Toss gently to combine.
  • Arrange a few Boston lettuce leaves on a serving plate and spoon the salad on top.
  • Finish with a squeeze of the remaining lemon juice, an extra sprinkle of salt and pepper, and garnish with fresh dill and lemon zest.
  • Serve immediately and enjoy!
