INGREDIENTS
For the Salad:
- 2 ripe avocados, peeled, pitted, and chopped
- 1 English cucumber, partially peeled and chopped
- 1 cup feta cheese, cubed or crumbled
- ½ cup fresh dill, leaves plucked or chopped
- 3 tbsp extra virgin olive oil
- 1 lemon, juice and zest (divided)
- Salt and pepper, to taste
For Serving:
- Boston lettuce leaves
- Juice of ½ a lemon
- Salt and pepper, to taste
- Fresh dill and lemon zest for garnish
DIRECTIONS
- In a medium-sized bowl, combine the chopped cucumber, avocado, feta, and dill.
- Season with salt and pepper, then drizzle with olive oil, half the lemon juice, and half the lemon zest. Toss gently to combine.
- Arrange a few Boston lettuce leaves on a serving plate and spoon the salad on top.
- Finish with a squeeze of the remaining lemon juice, an extra sprinkle of salt and pepper, and garnish with fresh dill and lemon zest.
