  • 4–6 boneless chicken thighs (varies by size), cut into bite-sized pieces
  • ½ yellow bell pepper, sliced

  • ½ green bell pepper, sliced
  • ½ small onion, sliced
  • 1 tablespoon paprika
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon Knorr bouillon powder
  • 1 teaspoon Creole seasoning (I used Tony Chachere’s)
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon dried thyme
  • ¼ teaspoon black pepper
  • Fresh parsley leaves (optional, for garnish)

INSTRUCTIONS

Step 1: Prep the Ingredients

  • Wash and cut the zucchini, bell peppers, and onions into similar-sized pieces.
  • Clean and cut the boneless chicken thighs into bite-sized chunks, keeping them similar in size to the zucchini for even cooking.

Step 2: Season the Ingredients

  • Place the chicken, zucchini, bell peppers, and onions in a large bowl.
  • Sprinkle the paprika, bouillon powder, Creole seasoning, onion powder, salt, thyme, and black pepper over the ingredients.
  • Drizzle with olive oil or avocado oil and toss everything together using a spatula or clean hands to ensure even coating.

Step 3: Air Fry the Chicken and Zucchini

  • Transfer the seasoned mixture into the air fryer basket.
  • Set the air fryer to 400°F (200°C) and cook for 10 minutes. (No need to preheat, but you can if preferred.)
