One-Pot Sausage and Red Rice – A simple Creole-inspired dish with bold flavors and minimal ingredients. A tasty spin on Jambalaya!
INGREDIENTS
- 1 pound smoked pork sausage
- 1 onion, chopped
- 1 small green bell pepper, chopped
- 1 teaspoon Creole seasoning
- 2 (8 oz) cans tomato sauce
- 1 ½ cups water
- 2 cups medium-grain rice

INSTRUCTIONS
- In a large pot over medium-high heat, brown the sausage, then transfer it to a plate lined with paper towels.
- Add the chopped onions and bell pepper to the pot, seasoning with ½ teaspoon of Creole seasoning. Sauté for about 7 minutes, or until the onions turn translucent.
- Return the sausage to the pot and stir in the tomato sauce, water, remaining Creole seasoning, and rice. Bring to a boil, then cover and reduce the heat to low. Simmer for 20–25 minutes.
- Remove the lid, stir, and check if the rice is fully cooked. If needed, add a little more water, cover, and cook for an additional 5 minutes. Serve warm!
