This quick and easy low-carb keto meatball casserole, packed with zucchini, cream, and plenty of cheese, makes a delicious make-ahead meal for you and your family.
INGREDIENTS
- ½ lb ground turkey
- ⅓ cup chopped onion
- 1 tablespoon cilantro or parsley (fresh or dried)*
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 zucchini, thinly sliced
- ½ cup grated Parmesan
- ½ cup heavy cream
- ½ cup shredded cheddar**

INSTRUCTIONS
- Preheat your oven to 400°F (200°C).
- Arrange the sliced zucchini in an even layer at the bottom of a casserole dish. Pour half of the heavy cream over the zucchini and sprinkle with half of the shredded cheddar.
- In a mixing bowl, combine the ground turkey, egg, onion, garlic powder, salt, and herbs. Shape the mixture into 12 meatballs and place them in a single layer over the zucchini.
- Top the meatballs with the remaining cheese and cream.
- Bake for 17 minutes, then switch the oven to broil and cook for an additional 5 minutes until the cheese is golden and bubbly. For extra cheesiness, add more shredded cheddar before broiling.
- Serve warm and enjoy!
