Store-bought tortillas just don’t compare to homemade ones. You’ve got to give making them yourself a go!
INGREDIENTS
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1 tsp kosher salt
- 1/2 cup lard or vegetable shortening
- 2 tbsp additional lard or vegetable shortening
- 1 cup hot water

DIRECTIONS
- In a large wooden bowl, combine the flour, baking powder, and salt. Stir to mix well.
- Add the lard or shortening (1/2 cup plus 2 tablespoons). Use a pastry cutter to blend the ingredients until the mixture resembles coarse crumbs.
- Gradually pour in the hot water, stirring to bring the dough together. Gently knead for 30-40 turns, or until the dough forms a smooth ball and is less sticky. Cover with a tea towel and let it rest for at least an hour.
- After resting, divide the dough into ping-pong-sized balls. Place them on a tray, cover with a tea towel, and let them rest for another 20-30 minutes.
- When ready to cook, heat a dark or cast-iron griddle to medium/medium-high heat. Roll each dough ball into a very thin circle.
- Cook the tortillas one at a time on the griddle, turning them after 20-30 seconds when you see brown spots. Remove them while they are still soft but slightly browned. Stack the cooked tortillas and cover with a towel to keep warm.
- Serve immediately or allow them to cool before storing in an airtight container. To reheat, microwave the tortillas or wrap them in foil and warm them in the oven.
HELPFUL TIPS
- Ensure the water is very warm when mixing it in.
- Let the dough rest after kneading and after forming the balls.
- Roll the dough very thin for the best texture.
- Adjust the griddle temperature carefully. If it’s too hot, the tortillas will burn in spots. If it’s not hot enough, they’ll begin to crisp before browning properly. Aim for medium to medium-high heat.
- A dark griddle or cast-iron skillet works best for even browning.
- Be sure not to overcook the tortillas; they should be soft and pliable, not crispy.
