HAM & CHEESE EGG BITES

These protein-packed Ham & Cheese Egg Bites are a simple and nutritious breakfast option made with fluffy eggs, cottage cheese, and cheddar, all baked to perfection in muffin tins. With just five ingredients, they’re a delicious, low-carb meal prep favorite!

INGREDIENTS

  • 12 large eggs
  • 1 tablespoon Dijon mustard
  • 1 cup cottage cheese
  • 6 ounces sharp cheddar, shredded
  • 9 ounces deli ham, chopped
  • Salt and pepper, to taste
  • Italian seasoning (optional)

INSTRUCTIONS

  • Preheat the oven to 350°F (175°C) and grease a muffin tin with non-stick spray.
  • In a large mixing bowl, whisk together the eggs, Dijon mustard, cottage cheese, chopped ham, salt, and pepper.
  • Pour about 1/3 cup of the egg mixture into each muffin cup.
  • Sprinkle 2 tablespoons of shredded cheddar on top of each muffin, adding a pinch of Italian seasoning if desired.
  • Bake for 20-25 minutes, or until the eggs are fully set.
  • Carefully remove from the muffin tin and serve warm.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
