INGREDIENTS
- 1 tablespoon avocado oil
- 1 small onion, finely chopped (about 1 1/2 cups)
- 3/4 teaspoon kosher salt, divided
- 1 pound ground turkey (93% lean)
- 1 teaspoon garlic powder or 2 cloves fresh garlic, minced
- 2 tablespoons Worcestershire sauce
- 12 ounces frozen mixed vegetables
- 1 cup frozen riced cauliflower
- 1 cup milk (any kind, or additional broth)
- 1/2 cup chicken or vegetable broth
- 2 tablespoons cornstarch or arrowroot powder
- 1/4 teaspoon ground pepper
- 1 cup shredded cheddar cheese
- 24-38 ounces frozen tater tots (or potato puffs)
INSTRUCTIONS
- Preheat the oven to 400°F (200°C). Lightly grease a large casserole dish (approximately 9×12 inches) with oil.
- In a large pot or skillet, heat the avocado oil over medium heat. Add the chopped onion and sprinkle with 1/2 teaspoon of salt. Sauté for 3 to 4 minutes, until the onion softens.
- Add the ground turkey, breaking it up into crumbles as it cooks. Once the turkey is browned, stir in the garlic powder, Worcestershire sauce, frozen mixed vegetables, cauliflower rice, and milk.
- In a small bowl or large measuring cup, mix the cornstarch with the broth until smooth, ensuring no clumps remain. Add this mixture to the pot and bring to a simmer.
- Let the mixture simmer for 5 minutes to thicken, stirring occasionally. Season with the remaining 1/4 teaspoon salt and 1/4 teaspoon ground pepper. Taste and adjust seasoning if needed.
- Transfer the turkey and vegetable mixture to the prepared casserole dish. Sprinkle with shredded cheddar cheese, then arrange the tater tots on top.
- Bake for 20-25 minutes, or until the tater tots are crispy and golden brown. Let the casserole sit for 5 minutes before serving.
