INGREDIENTS
- 10 oz lean ground beef (300g)
- 1 cup cooked quinoa
- 1 cup canned black beans, rinsed and drained
- 2 roasted red peppers, chopped
- 1 carrot, grated or finely chopped
- 1/3 cup fresh mint leaves
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp chili powder
- 1 tsp dried mint
- 1 tbsp tomato paste
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 3 scallions, chopped
- Salt to taste

INSTRUCTIONS
- Prepare by chopping the vegetables and rinsing the black beans.
- In a large skillet, crumble the ground beef and cook over medium heat with the lid on until no longer pink. If needed, add a little water to prevent sticking.
- Remove the lid, add olive oil, 1 minced garlic clove, cumin, dried mint, coriander, chili powder, and a few pinches of salt. Stir well and cook for another 2-3 minutes.
- Mix in the roasted red peppers and scallions, followed by the quinoa, black beans, and carrots. Stir to combine.
- Add the tomato paste, fresh mint, and remaining garlic. Let cook for 3-4 minutes, adjusting salt as needed.
- Turn off the heat and serve as is or with a fresh salad. Enjoy!
