GLUTEN-FREE CHEEZ-ITS

These homemade Gluten-Free Cheez-Its are a delicious copycat of the original, made with almond flour instead of wheat. Baked to crispy perfection in just 20 minutes, they deliver the perfect balance of cheesy and salty flavors.

INGREDIENTS

  • ½ cup (56g) almond flour
  • ¾ cup (84g) shredded extra sharp cheddar cheese
  • ¾ cup (84g) shredded mozzarella cheese
  • 1 ounce cream cheese
  • 1 egg, beaten
  • ¼ teaspoon salt
  • Nonstick cooking spray
  • Coarse salt (for topping)

INSTRUCTIONS

Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).

Step2: Prepare Dry Ingredients
In a small mixing bowl, whisk together almond flour and salt. Add the beaten egg and mix until well combined.

Step 3: Melt the Cheese & Combine
In a microwave-safe bowl, melt the cheddar, mozzarella, and cream cheese in the microwave for about 1 minute. Stir until smooth. Add the melted cheese to the almond flour mixture and knead with your hands until fully combined. If the dough becomes too stiff, microwave it for an additional 10-15 seconds to soften.

Step 4: Roll Out the Dough
Lightly coat two sheets of parchment paper with nonstick spray. Place the dough between the sheets and roll it out evenly using a rolling pin until very thin. Remove the top parchment sheet and slide a baking sheet under the bottom sheet.

Step 5: Cut & Season the Crackers
Using a pizza cutter, slice the dough into small squares. Sprinkle coarse salt over the top. For a classic Cheez-It look, crimp the edges with a fork and poke a hole in the center of each cracker using a skewer.

Step 6: Bake the Crackers
Transfer the baking sheet to the oven and bake for 7 minutes.

Step 7: Flip & Finish Baking
Remove the crackers from the oven and let them cool slightly. Use a spatula to flip them over. If any crackers have melted together, re-cut them with a pizza cutter. Return to the oven and bake for another 3-5 minutes until golden and crispy.

Step 8: Cool & Serve
Let the crackers cool completely before serving.

  • Room Temperature: Store in an airtight container for up to 5 days.
  • Freezing: Place in an airtight container or storage bag and freeze for up to 3 months. Thaw at room temperature before serving.
