- 1/4 cup vegan protein powder of choice (28 g)
- 1 tbsp baking powder (do not use baking soda)
- 1/2 tsp sea salt or kosher salt (see notes)
- 2 tbsp maple syrup (optional; see notes)
- 1 cup water, plus more as needed (see notes)
Instructions
- Mix Dry Ingredients: In a mixing bowl, combine the flour, protein powder, baking powder, and salt. Mix well to break up any clumps and ensure the ingredients are evenly distributed.
- Incorporate Wet Ingredients: Add the maple syrup or your preferred sweetener (if using). Gradually pour in the water while stirring, mixing just until combined. The batter should be thick and slightly lumpy but still pourable. If needed, add a little extra water, a tablespoon at a time, to adjust the consistency.
- Rest the Batter: Let the batter sit for 5–10 minutes to hydrate fully while you heat a non-stick pan or griddle over medium-low heat. Lightly grease the pan with cooking spray if necessary.
- Cook the Pancakes: Scoop about 1/4 cup of batter onto the heated pan for each pancake. Cook until bubbles form on the surface and the edges appear dry and firm. Flip and cook for another 1–2 minutes until golden. Repeat with the remaining batter.
- Serve and Enjoy:Serve immediately with your favorite pancake toppings. Store leftovers in the refrigerator or freezer, reheating as needed.

- Measuring Tips: For the best results, use a kitchen scale to measure ingredients accurately.
- Sweetener Options: Use maple syrup, agave, or coconut sugar for natural sweetness. For a sugar-free option, try stevia, monk fruit, or omit sweetener if your protein powder is already flavored and sweetened.
- Adjusting Batter Thickness: Start with 1 cup of water. If the batter is too thick to pour, add water gradually until it reaches the desired consistency. A thicker batter creates fluffier pancakes, while a thinner batter stretches further to make more pancakes.
- Portion Size: The recipe makes about 2 servings. The exact number of pancakes depends on their size and the amount of liquid added. Half the total pancakes is one serving.
- Salt Adjustment: Use 1/4 tsp table salt or reduce sodium content by using reduced-sodium baking powder if desired.
