EASY 20-MINUTE TUNA PASTA SALAD

This Tuna Pasta Salad is creamy, delicious, and incredibly easy to prepare in just 20 minutes. Using simple ingredients, it’s the perfect side dish to complement any main meal.

INGREDIENTS

  • 1 lb box of Rotini or Penne pasta
  • 12 oz tuna (3 cans of 4 oz each)
  • 5 tablespoons mayonnaise
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup red bell pepper, chopped
  • 1 small red onion, chopped
  • 3/4 cup corn
  • 1/2 teaspoon salt
  • 2 teaspoons vinegar
  • 1 tablespoon green onion, thinly chopped, for garnish

INSTRUCTIONS

  • Cook the pasta according to the package instructions. Drain and set aside to cool.
  • In a large bowl, combine the pasta with the remaining ingredients and mix well.
  • Garnish with green onion and serve.

NOTES

  • Be careful not to overcook or undercook the pasta. It should be al dente when drained.
  • Allow the pasta to cool before mixing with mayonnaise. Adding mayo to hot pasta can cause it to separate and become oily.
  • Full-fat mayonnaise provides the best flavor, but you can use reduced-fat mayo to reduce calories.
