INGREDIENTS
Dough
- 4 cups (512 g) all-purpose flour, divided (more if needed)
- 2 envelopes (about 4½ teaspoons) instant yeast
- ¼ cup (50 g) granulated sugar
- 1 large egg, room temperature
- 1 teaspoon kosher salt
- 1½ cups (367 g) whole milk, warmed to 110-120°F
- 2 tablespoons salted butter, melted
Topping
- 2 tablespoons unsalted butter, melted
- ¼ teaspoon kosher salt (optional)

INSTRUCTIONS
Make the Dough:
- In a large bowl or the bowl of a stand mixer fitted with a dough hook, combine 3 cups flour, yeast, sugar, egg, and salt.
- Pour in the warm milk and knead on medium speed for 2 minutes, scraping the bowl as needed.
- Add ½ cup flour and continue kneading for another 2 minutes.
- Mix in the remaining ½ cup flour. The dough should be soft and pulling away from the sides of the bowl. If too wet, add more flour in ¼ cup increments until it reaches the right consistency.
- Lightly grease a bowl with nonstick spray and place the dough inside. Cover with a clean towel and let rise for 30 minutes, or until doubled in size.
Assemble the Rolls:
- Grease a muffin tin with nonstick cooking spray.
- Roll out the dough into a ½-inch thick square. Brush with melted butter and sprinkle with salt.
- Use a pizza cutter to slice the dough into 12 equal strips, about 1½ inches wide.
- Stack the strips into two piles (6 strips per stack). Cut each stack into 6 equal sections, creating 12 stacks.
- Place each stack on its side into the prepared muffin tin, cut-side up.
- Cover with greased plastic wrap and let rise for 30-40 minutes, until the rolls are about 1 inch above the muffin tin.
Bake:
- Preheat oven to 375°F.
- Bake for 12-17 minutes, or until golden brown.
- While warm, brush with melted butter and sprinkle with salt, if desired.
