INGREDIENTS
- 3 eggs, slightly beaten
- 2 cups sugar
- 1 cup butter, softened (2 sticks)
- 2 cups grated zucchini
- 1 large Granny Smith apple, cored and grated
- 2 teaspoons vanilla extract
- 3 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon apple pie spice
- 1 cup chopped nuts (pecans or walnuts)
INSTRUCTIONS
- Preheat the oven to 350°F (175°C). Grease or spray two 9-inch loaf pans with nonstick cooking spray and set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs, sugar, and butter until light and fluffy, about 5 minutes.
- Stir in the zucchini, grated apple, and vanilla until well combined.
- In a separate bowl, whisk together the flour, salt, baking powder, baking soda, and apple pie spice.
- Gradually add the dry ingredients to the wet mixture and stir with a spatula until just combined—be careful not to overmix. Gently fold in the chopped nuts.
- Divide the batter evenly between the prepared loaf pans and bake for 1 hour, or until a toothpick inserted into the center comes out clean.
