APFEL QUARK MUFFINS

These apple quark muffins are a healthy alternative to traditional muffins because they are made without refined sugar. Instead, I use xylitol to sweeten them. I also use quark, which makes these muffins particularly moist and high in protein. Perfect as breakfast muffins or a healthy snack between meals!

INGREDIENTS AND ALTERNATIVES

  • Flour: I use regular wheat flour, but you can substitute with spelt flour or wholemeal flour.
  • Quark: I prefer quark with a high fat content to avoid adding extra oil or butter, but you can use any fat content of your choice. Ensure the quark is at room temperature if possible.
  • Xylitol: You can replace xylitol with any other granulated sugar like coconut blossom sugar, or use erythritol as a healthy alternative.
  • Milk: I use regular cow’s milk, but you can opt for plant-based milk like oat or almond milk.
  • Eggs
  • Apples: Choose sweet apple varieties like Granny Smith or Pink Lady.
  • Baking Soda: Baking soda is a great alternative to baking powder for recipes with acidic ingredients like quark. If using baking powder, use 2-3 times the amount.
  • Cinnamon
  • Salt

APPLE QUARK MUFFINS RECIPE

Step 1: Preparation

  • Preheat your oven to 200°C (390°F) and line a muffin tray with twelve muffin cups.
  • Peel the apples and cut them into small cubes.

Step 2: Prepare the Dough

  • In a mixing bowl, beat the xylitol and eggs together until fluffy.
  • Add the quark, milk, and vanilla extract, and stir until well combined.
  • In a separate bowl, mix the dry ingredients: flour, baking soda, cinnamon, and a pinch of salt.
  • Slowly incorporate the dry ingredients into the wet ingredients while stirring continuously to create a smooth muffin batter.
  • Gently fold in the apple cubes.

Step 3: Fill the Molds

  • Fill the prepared muffin tins with the muffin batter using two tablespoons for even distribution.

Step 4: Bake the Muffins

  • Place the muffin tray in the preheated oven and bake for about 20 minutes. Use the toothpick test: if dough sticks to the toothpick, bake a little longer. Once fully baked, let the muffins cool.

Variations:

  • You can substitute apples with other fruits like pears or berries.
  • Add nuts like chopped almonds or hazelnuts for a tasty crunch.
  • Raisins complement the apple cinnamon flavor well. Feel free to add a few to the batter.
