Give your morning oatmeal a protein-packed upgrade with cottage cheese! These rich, creamy oats are incredibly satisfying and ready in just 5 minutes.
INGREDIENTS
- 1/2 cup rolled oats
- 1 cup water or almond milk
- 1/4 cup cottage cheese
- Sweetener to taste

INSTRUCTIONS
- In a large microwave-safe bowl (at least 5 cups in capacity to prevent overflow), combine the oats and water or almond milk.
- Microwave on 70% power for 2 1/2 to 3 minutes, adjusting as needed based on your microwave’s strength. Cooking at reduced power helps prevent the oatmeal from boiling over.
- Carefully remove the bowl using oven mitts and stir the oats. Let them sit for a couple of minutes to thicken.
- Stir in the cottage cheese and sweetener of choice.
- Add your favorite toppings and enjoy!
NOTES
Normally, I add salt to my oatmeal, but since cottage cheese is already salted, no extra salt is needed.
