COPYCAT LOFTHOUSE COOKIES

These homemade copycat Lofthouse cookies capture the same super-soft, melt-in-your-mouth texture as the sugar cookies you love from the grocery store. Enjoy all the nostalgic sweetness without the added preservatives!

INGREDIENTS

  • 1/3 cup unsalted butter, softened
  • 3 tablespoons vegetable oil
  • 3/4 cup granulated sugar
  • 3/4 cup powdered sugar
  • 1 egg, at room temperature
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon almond extract
  • 1 tablespoon milk
  • 2 cups cake flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt

For the Frosting

  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract
  • 1/4 teaspoon salt
  • Food coloring

INSTRUCTIONS

  • Preheat your oven to 325°F and line a baking sheet with parchment paper. Set aside.
  • In a stand mixer with the whisk attachment, beat the softened butter and vegetable oil together for about 2 minutes until smooth and well combined.
  • Gradually add in the granulated sugar, then the powdered sugar, mixing until fully incorporated. Scrape down the sides of the bowl, and then add the egg, milk, vanilla extract, and almond extract. Beat until smooth.
  • Scrape the bowl again and add the cake flour, baking powder, baking soda, and salt. Mix until just combined, being careful not to overmix.
  • Using a 1-ounce cookie scoop, portion the dough into balls. Roll them into smooth balls and place them 2 inches apart on your prepared baking sheet. Gently flatten each ball with your palm.
  • Bake at 325°F for 13 minutes or until the edges are set but the centers are slightly underdone. Let the cookies cool completely on a wire rack.
  • While the cookies are cooling, prepare the frosting. In a stand mixer with the paddle attachment, combine all the frosting ingredients. Beat on low, gradually increasing to high, until the mixture is smooth and creamy but not overly fluffy. Add food coloring to your desired shade, adding more if you prefer a deeper color.
  • Once the cookies have cooled, frost them using an offset spatula to spread the frosting evenly. Add sprinkles on top if desired, and enjoy!
