INGREDIENTS

  • 1 ½ pounds chicken tenders
  • 32 ounces chicken stock

  • 2 tablespoons finely minced celery
  • 2 teaspoons dry ranch dressing mix
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • ¾ cup red seedless grapes, halved
  • ½ cup chopped pecans
  • ½ to ¾ cup chopped Fuji apple

INSTRUCTIONS

  • Cook the Chicken – In a large pot, add the chicken tenders and chicken stock. Poach over medium heat for 15–20 minutes or until fully cooked.
  • Shred the Chicken – Use a stand mixer with a paddle attachment for quick shredding, or shred by hand with two forks.
  • Prepare the Dressing – In a medium bowl, combine the mayonnaise, celery, dry ranch dressing mix, salt, and black pepper. Mix well.
  • Assemble the Salad – Add the shredded chicken to the dressing and mix thoroughly. Gently fold in the grapes, chopped apples, and pecans.
