CONCENTRATED CHICKEN STOCK PASTE 

Concentrated chicken stock paste is a versatile and convenient way to add rich, savory flavor to your dishes. This concentrated form of chicken stock is made by simmering chicken bones, vegetables, and herbs for an extended period, then reducing the liquid to a thick, flavorful paste. This paste can be stored in your pantry or refrigerator for months, making it a great way to always have delicious chicken stock on hand.

INGREDIENTS

  • 4 chicken thighs
  • 1 large sweet onion
  • 2 large carrots
  • 3 celery stalks
  • 4 cloves garlic
  • 2 tomatoes
  • 1 medium zucchini
  • ½ bunch parsley
  • 3 sprigs fresh thyme
  • 1 large bay leaf
  • 6 sage leaves
  • 2 sprigs rosemary
  • ½ cup white wine
  • 75 grams mineral salt
  • 2 tablespoons THM Gentle Sweet
  • 1 cup nutritional yeast flakes
  • 1 teaspoon turmeric
  • 1 teaspoon smoked paprika
  • 10 whole peppercorns
  • 1 tablespoon Worcestershire sauce

INSTRUCTIONS

  • Prepare the Ingredients: Wash and roughly chop the vegetables. Remove the chicken from the bones and chop it roughly.
  • Process the Chicken and Vegetables: In a food processor, pulse the chicken until finely minced. Add the chopped vegetables and fresh herbs, processing until a paste forms.
  • Cook the Mixture: Transfer the paste to a pot. Stir in the white wine, nutritional yeast, Gentle Sweet, and all other seasonings. Mix well and add the chicken bones. Cook over medium-high heat with the lid slightly ajar for 1 hour, stirring occasionally.
  • Blend the Mixture: After an hour, remove and discard the chicken bones. Allow the mixture to cool slightly, then transfer it to a blender and blend until smooth. Pour the blended mixture back into the pot and add Worcestershire sauce. Return to the heat on medium-low.
  • Thicken the Mixture: Cook uncovered until the mixture thickens and most of the liquid evaporates, which may take an hour or longer. To prevent splattering, use a splatter guard, and consider using a shallow pan to speed up the process.
  • Store: Once thickened, transfer the mixture to a mason jar and store it in the freezer.
