COLD CHICKEN SPINACH PASTA SALAD

This Cold Chicken Spinach Pasta Salad is a quick and easy meal prep idea or a perfect dish for a potluck!

INGREDIENTS

  • 3 cups pasta
  • 2 chicken breasts, cooked and shredded
  • 5 ounces spinach
  • 3-4 tablespoons creamy roasted garlic dressing (or your preferred dressing)
  • Optional: chili flakes for topping

INSTRUCTIONS

  • Cook the pasta according to the package instructions until al dente.
  • Cook the chicken using your preferred method, then shred and set aside.
  • Before draining the pasta, prepare a bowl of ice water to shock it and stop the cooking process.
  • In a large bowl, combine the spinach, shredded chicken, and pasta. Toss with the dressing of your choice.
  • Chill before serving, and top with chili flakes if desired. Enjoy!
