This Cold Chicken Spinach Pasta Salad is a quick and easy meal prep idea or a perfect dish for a potluck!
INGREDIENTS
- 3 cups pasta
- 2 chicken breasts, cooked and shredded
- 5 ounces spinach
- 3-4 tablespoons creamy roasted garlic dressing (or your preferred dressing)
- Optional: chili flakes for topping

INSTRUCTIONS
- Cook the pasta according to the package instructions until al dente.
- Cook the chicken using your preferred method, then shred and set aside.
- Before draining the pasta, prepare a bowl of ice water to shock it and stop the cooking process.
- In a large bowl, combine the spinach, shredded chicken, and pasta. Toss with the dressing of your choice.
