Classic Southern Cornbread is a beloved staple of Southern cuisine, cherished for generations and a common sight on tables across the region.
INGREDIENTS
- 240g cornmeal (yellow)
- 30g flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 egg, slightly beaten
- 480ml buttermilk
- 2 tablespoons bacon drippings or vegetable oil
INSTRUCTIONS
- Preheat the oven to 200°C (400°F).
- Add the drippings or oil to a 9-inch or 10-inch cast-iron skillet and place it in the oven for a few minutes until it’s sizzling.
- In a large mixing bowl, combine the dry ingredients: cornmeal, flour, baking powder, baking soda, and salt. Set aside.
- In a small bowl, whisk together the egg and buttermilk. Pour the wet mixture into the dry ingredients and stir until well combined.
- Carefully remove the hot skillet from the oven and pour the batter into it.
- Bake for 20-25 minutes, or until the top is light brown.
- Remove the cornbread from the oven, flip it over in the skillet, and continue baking for an additional 5 minutes.
