CLASSIC SOUTHERN CORNBREAD

Classic Southern Cornbread is a beloved staple of Southern cuisine, cherished for generations and a common sight on tables across the region.

INGREDIENTS 

  • 240g cornmeal (yellow)
  • 30g flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 egg, slightly beaten
  • 480ml buttermilk
  • 2 tablespoons bacon drippings or vegetable oil

INSTRUCTIONS

  • Preheat the oven to 200°C (400°F).
  • Add the drippings or oil to a 9-inch or 10-inch cast-iron skillet and place it in the oven for a few minutes until it’s sizzling.
  • In a large mixing bowl, combine the dry ingredients: cornmeal, flour, baking powder, baking soda, and salt. Set aside.
  • In a small bowl, whisk together the egg and buttermilk. Pour the wet mixture into the dry ingredients and stir until well combined.
  • Carefully remove the hot skillet from the oven and pour the batter into it.
  • Bake for 20-25 minutes, or until the top is light brown.
  • Remove the cornbread from the oven, flip it over in the skillet, and continue baking for an additional 5 minutes.
