These Cinnamon Collagen Protein Bars are a delicious and nutritious low-carb Paleo snack. Packed with superfoods like almonds, pumpkin seeds, and collagen, they’re naturally sweetened with monk fruit and infused with warm cinnamon flavor. Best of all, these no-bake bars are easy to make and low in sugar!
INGREDIENTS
- ½ cup almonds (raw or dry roasted)
- ½ cup raw pumpkin seeds
- ¼ cup ground flaxseed*
- ¼ cup collagen peptides
- 2 tablespoons monk fruit sweetener (or coconut sugar)
- 1 teaspoon cinnamon
- Pinch of salt (omit if using salted almonds)
- 2 tablespoons water
- 1 teaspoon vanilla extract

INSTRUCTIONS
- In a food processor, blend the almonds and pumpkin seeds until they reach a coarse flour consistency.
- Add the ground flaxseed, collagen, monk fruit sweetener, cinnamon, and salt. Blend until well combined.
- Pour in the water and vanilla extract, then blend again until the mixture forms a dough-like ball.
- Press the dough firmly into a lined 8″ x 4″ baking pan.
- Freeze for at least one hour to set.
- Once firm, remove from the pan and cut into eight equal bars.
- Store in the refrigerator or freezer until ready to enjoy.
