INGREDIENTS
- 2 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 16 tablespoons (1 cup) unsalted butter, softened
- 3/4 cup packed dark brown sugar
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 egg yolks
- 9 ounces bittersweet chocolate, coarsely chopped
INSTRUCTIONS
Step 1:
Preheat the oven to 375°F. In a bowl, whisk together the flour, baking soda, and salt; set aside. In a large bowl, combine the butter, both sugars, and vanilla extract. Beat with a hand mixer on medium-high speed until smooth and fluffy, about 3 minutes. Add the egg yolks two at a time, beating well after each addition. Gradually add the dry ingredients and beat on low speed until just combined. Transfer the dough to a work surface, divide it into three equal pieces, and flatten each piece into a 4″ x 6″ rectangle. Wrap each rectangle in plastic wrap and chill for 30 minutes.
Step 2:
Place one dough rectangle on a floured surface and sprinkle with half of the chopped chocolate. Top with a second dough rectangle, sprinkle with the remaining chocolate, and cover with the last rectangle. Using a floured rolling pin, roll the dough into a 9″ x 6″ x 1 1/2″ rectangle. Cut out cookies with a 2″ round cutter and transfer them to parchment paper-lined baking sheets, spaced 3″ apart. Gather any dough scraps, reroll into a 1 1/2″-thick disk, and cut out additional cookies. Bake, rotating the baking sheets halfway through, until the cookies are lightly browned and set, about 15 minutes.
