Chocolate Chip Banana Bread
- 1 1/2 cups (380g) ripe, mashed bananas (about 3-4 medium bananas)
- 1/2 cup (100g) packed light brown sugar
- 1/2 cup (100g) granulated sugar
- 1/2 cup (110g) unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup (130g) 2% Greek yogurt (or substitute with sour cream)
- 1 1/3 cups (180g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup (140g) mini chocolate chips, plus extra for topping
INSTRUCTIONS
Chocolate Chip Banana Bread
- Preheat the oven to 325°F (165°C) and grease a 9×5-inch loaf pan, then line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a separate large bowl, combine the melted butter, brown sugar, and granulated sugar, whisking until it reaches a paste-like consistency. This may take a minute or two of vigorous mixing, either by hand or using an electric mixer with a paddle attachment.
- Add the mashed bananas, eggs, yogurt, and vanilla extract to the wet ingredients, mixing until smooth.
- Gently fold in the dry ingredients, then add the chocolate chips, stirring just until combined.
- Pour the batter into the prepared loaf pan, smoothing the top. Sprinkle additional chocolate chips over the top if desired.
- Bake for 1 hour to 1 hour and 15 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Let the bread cool completely in the pan before slicing.
- Store the banana bread in an airtight container at room temperature.
