INGREDIENTS
Filling:
- ½ banana, mashed
- 1 tablespoon chocolate chips (optional)
Wet Ingredients:
- 1 egg
- 2 tablespoons vegetable oil
- 2 tablespoons honey
- 3 tablespoons milk
- ¼ teaspoon pure vanilla extract
Dry Ingredients:
- 7 tablespoons whole wheat flour
- 3 tablespoons cocoa powder
- ½ teaspoon baking powder
- ⅛ teaspoon salt
Garnish:
- 2 slices banana
INSTRUCTIONS
- Mash the banana and mix in the chocolate chips, if using.
- In a small bowl, whisk together the egg, oil, honey, milk, and vanilla extract.
- In another small bowl, combine the flour, cocoa powder, baking powder, and salt.
- Add the wet ingredients to the dry ingredients and stir until well combined.
- Grease two small mugs and fill them halfway with the chocolate batter.
- Spoon the banana filling into the center of each mug, then top with the remaining chocolate batter.
- Garnish with banana slices.
- Microwave on high for 1 minute 10 seconds to 1 minute 25 seconds, or bake in a preheated 350°F (180°C) oven for 13-15 minutes.
