Cheesy Italian Turkey Cauliflower Rice Casserole is just as delicious as it sounds! This flavorful, low-carb dish features a hearty mix of ground turkey, cauliflower rice, Greek yogurt, veggies, and a blend of cheeses, making it a guaranteed crowd-pleaser.
INGREDIENTS (SERVES 6)
- 1 tbsp olive oil
- 1 cup diced onion
- 3 cloves garlic, minced
- 1 lb 93% lean ground turkey
- 2 tsp Italian seasoning
- Salt and pepper, to taste
- 4 cups baby spinach
- 14 oz canned fire-roasted diced tomatoes (drained well)
- 10 oz cooked cauliflower rice
- ½ cup plain nonfat Greek yogurt
- ¼ cup light cream cheese
- 4 tbsp grated Parmesan cheese
- 1 cup shredded part-skim mozzarella cheese

INSTRUCTIONS
- Preheat & Sauté: Preheat oven to 375°F. Heat olive oil in a large skillet over medium-high heat. Add onion and sauté for 3-4 minutes until softened. Stir in garlic and cook for 30-60 seconds until fragrant.
- Cook the Turkey & Veggies: Add ground turkey, Italian seasoning, salt, and pepper. Cook for 6-8 minutes, breaking up the turkey as it browns. Stir in spinach and drained tomatoes, cooking for 1-2 minutes until the spinach wilts. Drain excess liquid to prevent a watery casserole.
- Prepare the Casserole Base: Lightly grease a 9×13-inch baking dish. Warm the cauliflower rice in the microwave, then mix it with Greek yogurt, cream cheese, and Parmesan cheese in the bottom of the dish. Stir until the cream cheese melts into the rice.
- Assemble & Bake: Mix the turkey and veggie mixture into the cauliflower rice base. Sprinkle mozzarella cheese on top. Bake uncovered for 20-25 minutes until the cheese is melted and bubbly.
